Nougat Cubbaiata

For four people:

  • 1 kg peeled almonds
  • 1 kg sugar
  • 100 g pine nuts
  • 200 g raisins
  • lemon peel
  • orange peel
  • cinnamon


Take a large nonstick skillet. Pour the sugar, the almonds, the pine nuts, the raisins previously soaked in warm water and then squeezed, the orange and lemon peel cut into julienne strips and two tablespoons of cinnamon-powder.

Cook it on high heat, stirring constantly with a wooden spoon so that nothing will stick. When sugar starts to melt and the ingredients are toasted golden brown, pour everything on a steel or marble level previously oiled.

Roll out the dough with a spatula and let it cool.

When it’s ready, break it with your hands and serve.
