Pistachio mousse

For four people:

  • 125 g  whole milk
  • 125 g cream
  • 4 egg yolks
  • 45 g sugar
  • 10 grams white chocolate
  • 10 grams pistachio paste

 

Prepare the cream: mix cream and milk in a saucepan and let boil.

Meanwhile, whisk the eggs with the sugar in another bowl and pour the mixture into the saucepan with the heat off. Put it on the flame again and, while stirring with a whisk, add the white chocolate and pistachio paste.

Whisk all the ingredients with a blender.

Let it cool.

Pour the liquid into a siphon, close, load it with gas and shake very well. Put it in a fridge for one hour.

Serve the mousse with pistachio in a glass container with dry almond biscuits to your taste.
