Watermelon frozen pudding

For four people:

  • 1L juice watermelon (or cucumber)
  • 250 g sugar
  • 80 g corn starch
  • 100 g chocolate drops
  • cinnamon
  • essence of jasmine

 

Take the watermelon, cut them in two parts and extract the pulp. Remove carefully the seeds, mix the pulp in a blender and sieve it in order to obtain 1 liter of melon juice.

Pour the juice with a strainer in a small saucepan together with the starch, mixing constantly to avoid lumps.

Add the sugar and cook it over low heat, until the mixture produces a froth on the surface.

Now remove it from heat, let it cool and add the chocolate chips, a teaspoon of essence of jasmine and a hint of cinnamon.

Mix to amalgamate all the ingredients, pour into a pudding molds and place it in fridge for about 3 hours.

When the mixture, now called "freeze" , is coagulated, put it in a saucer and decorate as you like, sprinkle a pinch of cinnamon and grated cinnamon stick on.
