Basmati rice with citrus pesto, avocado and mint

For four people:

  • 200 g Basmati rice
  • 1 green tomato
  • a small bunch of mint
  • 1 ripe avocado
  • extra virgin olive oil
  • salt

for the pesto citrus:

  • 100 g peeled almonds
  • 100 g of capers in salt
  • 2 oranges
  • a small bunch of basil
  • 1 green tomato


Boil the rice in a saucepan containing slightly salted water.

Meanwhile whisk grossly the peeled oranges pulp, the almonds, the desalted capers, the washed basil leaves and the tomato. Now you obtain the citrus pesto. When the rice is 3\4 cooked, pour the pesto citrus into the pot and continue to cook stirring, to absorb the cooking liquid.

Once it’s al dente, let the rice stand and peel and cut the avocado into cubes, chop the mint and the green tomatoes left.

Add these ingredients to the rice and serve immediately.
