Soup pasta with pretended sauce

For four people:

  • 200 grams of ditalini pasta
  • 400 g ripe tomatoes
  • 100 g of tomato concentrate
  • 150 g pecorino cheese
  • a small bunch of basil
  • cinnamon
  • extra virgin olive oil
  • salt and pepper

 

Clean, wash and chop the tomatoes. Put them in a pot along with basil, washed and chopped, a tablespoon of oil and a bit of water. Let it boil on low heat and when the ingredients are well blended, add the tomato concentrate, a pinch of cinnamon, salt and pepper. Cook it for about 30 minutes and pour a little water to form a liquid sauce. 

Add the pasta and cook it until it is “al dente”. 

When the pasta is cooked, serve the soup hot and sprinkled with grated pecorino.
